Happy marriage cake

Barley flakes are great for porridges but also for baking, instead of oats for example.  This is a very traditional recipe in Iceland but the barley flakes makes it more crispy.

1 cup barley flakes from Móðir Jörð
1/2 cup organic white flour or spelt
1/2 cup raw cane sugar
1/2 tsp baking soda
1/2 tsp grapeseed baking powder
100g butter
1 small egg
Organic Rhubarb and/or blueberry jam for the filling

Mix all the ingredients  (except the jam) well in a bowl and knead with your hands to form the dough. Leave to rest in a refrigirator for 1/2- 1hour.  Knead again to warm up the dough a bit and then press 80% of the dough in an oven proof baking dish (non stick or  use baking paper).  Fill with the jam and spread the rest of the dough on top.  Bake in an oven at 180°C for 20-25 minutes.
